The Experience

Oaxaca City runs on mole, mezcal, and market culture, and the three are inseparable. The Mercado 20 de Noviembre is where you eat: rows of tlayuda stations, tasajo (dried beef), memelas, and chile negro sauce that takes days to make. The Mercado Benito Juárez next door is where you shop: chapulines (grasshoppers, toasted and salted, better than you expect), artisan chocolate in blocks, textiles in colors that don't occur elsewhere. The two markets alone could fill an entire day.

Monte Albán, the Zapotec city built on a flattened mountaintop above the valley, is one of the great pre-Columbian sites in the Americas — less visited than Teotihuacán, more atmospheric, with a view that gives the whole valley to you. Go at opening, bring water, and take the far ballcourt trail before the tour buses arrive. The drive back down through agave fields sets the scene for the evening.

Mezcal here is not a cocktail ingredient — it's a conversation. The palenques (small distilleries) in the villages around Mitla and Matatlán will let you watch production from the roasted agave pits through the clay pots to the final pour. In the city, the mezcalerías on Cinco de Mayo and García Vigil are serious rooms where the staff know their producers. Order by region and pay attention.

The craft culture — Zapotec weavers in Teotitlán del Valle, black clay potters in San Bartolo Coyotepec, alebrijes in Arrazola — is genuinely alive, not a tourist performance. These villages are a short colectivo ride from the city and deliver the experience of watching extraordinary skill in ordinary settings.
